4 Baby bok choi (about 1 lb, washed and split horizontally)
½ lb Coarse textured mealworm protein (Mealworm TIP)
2 tbsp Chives or green onions (chopped)
4 tsp Soy sauce
2 tsp Lime juice or rice wine vinegar
1 tsp Lime or lemon zest (optional)
¼ tsp Sugar
1 tsp Sesame oil
1 tbsp Vegetable oil
1 tbsp Red pepper flakes (optional)
1) In a medium bowl, combine all ingredients except bok choi, vegetable oil, and TIP. Whisk until sugar is dissolved and ingredients are well mixed. Reserve.
2) Steam bok choi for about 6 minutes or until tender
3) In a heavy pan, heat the vegetable oil. Slice mealworm TIP into strips and fry in vegetable oil until browned. Flip and brown other side. Remove from pan and pat dry with paper towel.
4) Plate bok choi and mealworm TIP strips. Drizzle with soy sauce mixture and serve.
